Egg White Scramble with Asparagus and Swiss Cheese
Well Denver has started out the month of not eating out with a tasty and nutritious breakfast. I sauteed 6 spears of asparagus in a little butter and garlic, then put the whites of about 8 eggs in a pan and added the asparagus and some swiss cheese. I scrambled that all together and served it with some frozen blueberries and a bowl of cottage cheese on the side. Of course there was plenty of coffee to accompany breakfast!

The yolks got put into a wonderful chocolate cookie recipe that I made on Friday, so the whites were waiting for breakfast this morning. I may post the cookie recipe even though I got it from someone else.
