Fast and Easy Flounder Tacos

Some nights you just aren’t in the mood to make an elaborate dinner, but you don’t want to go out either!! A really fast and easy dinner that gives you all the veggies and satisfying flavor is flounder tacos. I used flounder but you can use almost any mild flavored fish, snapper, sheepshead, trout, and then there is that fresh water favorite-catfish. The beauty of this meal comes from the quick thawing fish filets (20 minutes will do it). Put beans on to heat (here I used black beans, but pintos are a regular in our house), chop lettuce, tomatos, cilantro if you have it, and onion or scallions. Avocado’s are a delicious addition,too. Now on to the fish, dust filets with flour, salt and pepper and quick sear in a skillet with 2 TBS olive oil. While this is cooking (it won’t take long) heat corn tortillas in another skillet. A tip to cut down on oil used, lightly brush tortillas with olive oil before heating in the hot skillet. Another method is you quickly run the tortilla under water and then heat but these can be more fragile so for the bulky fish tacos, I suggest the oil method. This dinner was ready to eat from fish out of the freezer to table in about 30 minutes so it works timewise and the fish was filling and healthy!

I’m sure that it was fast and easy although it all happened while I was crashed after work so it just miraculously appeared in front of me. I can testify completely that once again Kathy was on top of her game and it was a great dinner. For all you leftover fans the flounder made a nice fish sandwich for lunch the next day too.

Mmm, wish the taco chef was here tonight to whip up my dinner. Mike just started a “cleanse” program so I’m left to my own devices for dinner. And as well know, cooking for one just isn’t as much fun. Grr!
