Sausage breakfast scramble

This is so simple it shouldn’t even count as a post, but for any of you sausage lovers who are scared to mix it into their eggs, this is for you! We were out of tortillas this morning so we served the sausage-y goodness with toast and sliced fresh pears BUT, in a flour or corn tortilla, mm!

Serves 1 (add more sausage/eggs according to your hunger/guests)

Ingredients:
1 link of chorizo or breakfast sausage
2 eggs
1 Tbsp cheddar cheese, shredded (we use sharp)
seasonings: garlic salt, red pepper flakes

Sausage links are essentially ground meat and seasonings stuffed into casing. Because you want crumbled sausage, you need to pull the casing off. Just cut a slit into the sausage and peel off the casing. In a large pan over medium high heat, plop in the sausage meat and saute. Stir frequently and break up the sausage into smallish crumbles. While it’s cooking, whisk up your two eggs with a sprinkle of seasonings. Once your meat is browned nicely and you don’t see any raw meat, pour in your egg and stir. Turn the heat down to medium and keep folding the egg in upon itself. I use a silicon spatula when I make eggs as its flexibility allows you to keep any egg from sticking to the pan. A nonstick pan helps with that as well. When the eggs are almost done, sprinkle your cheese in and fold the eggs one more time.

Turn off the heat and serve your sausage cheesy eggs in a warm tortilla or toast. It really doesn’t matter what it’s next to, it’ll steal the show.
