Broccolini with caramelized garlic chips

Last night was one of our favorite comfort meals, pan cooked broccolini with caramelized garlic chips and penne vodka. Add in a nice big red leaf salad and you’ve got a delicious, filling and soothing meal. It might even have a few pesky nutrition points too! We cheated and bought fresh direct vodka sauce so no recipe on that but promise me you’ll try this easy broccolini dish. So tasty, I’d choose it over dessert any day!

Ingredients:
1 handful of broccolini*
4 cloves of fresh garlic, sliced thin
1/2 Tbsp olive oil
kosher salt

*serves two broccolini lovers

Heat your olive oil over low, low heat and add in the garlic slices. Season with salt. Get this started first as the caramelization process is best over low heat, less risk of burning your garlic. The slices should be slowly browning and going soft, stir every 4 or 5 minutes. Wash your broccolini and cut the fibrous ends off the stalks. Once your garlic has taken on a rich golden color, pull them out and turn up the heat to a medium high. Throw the broccolini in and let it cook for about 3-4 minutes on one side. Toss for even cooking. It’ll turn a rich, bright green. After about 8 minutes, taste one of the stalks to see if it’s at the right crunch level for you. We likes ours with some pop to it but you might go for a softer bite. Add your garlic back in and toss to distribute.

Serve and enjoy!
