pineapple rum punch

I tried to think of a cool name for this drink, but somehow “Laura’s Tiki Punch” sounded a little touristy, though delicious. This drink may look like it is very sweet, but it actually isn’t. Because it uses the pineapple juice plus club soda, it is a lot less sweet than if I had used pineapple soda. (So if you like your drinks sweeter, use a pineapple soda instead of the juice plus club soda). Enjoy with your favorite appetizers on the patio!


Ingredients:
1-3 ounces rum, depending on how strong you want it
3 ounces pineapple juice
1-2 ounces pomegranate blueberry juice (pomegranate or blueberry liquor would also be good)
3 ounces club soda
Mix the first 3 ingredients in a cocktail shaker, then stir in the club soda. Pour over ice and garnish with frozen berries (a sprig of mint would also be a nice finishing touch, but we didn’t have any available).
