Shrimp salad

This is really a cheater post as I didn’t make the shrimp salad, I just assembled the plate but it was so tasty, I have to share! We knew the week after the wedding would be pretty much worthless as far as cooking. We’re just now feeling back to normal so I made sure to fill the fridge with easy ingredients and this was one of them. You could make it on your own by blending some srichaca, mayo, a sprinkle of old bay and some lemon juice. Oh and poached shrimp with diced celery. I’ll actually try and recreate this sometime soon, so I’ll get a more exact recipe up here! So we just threw this on a warmed tortilla with crisp red leaf lettuce and sprinkled a little lime and sea salt over it. Delicious! And it was even better with roasted green beans coated in a curry spice (custom made by Laura and Hunter in Denver!). Yum!
So the moral of this is, it’s not always about cooking, sometimes you just have enough energy to throw something together but in the end, it’s way better than what you get from a restaurant! Generally cheaper too. Granted, last night we got black olive, onion and pepporoni pizza from our neighborhood shop so we see the appeal of that too. But it only happened because we let our fridge go empty so it’s our own fault!

Glad you like the curry! I think seafood salads like this will be a staple summer food for me this year, they are so easy to make into a great meal.
