Cure to the Sandwich Doldrums

Image of proscuitto parmesan sandwich

The key to any great sandwich is to use really great ingredients.  This one’s secret is the light porky flavor from the single slice of proscuitto. Not too meaty and not too cheesy…this is my new favorite sandwich! Add in the creamy mayo with the zip of the dijon mustard. Mmm mm good. And I used lots of lettuce to make myself feel healthy. You don’t have to use that much but it does add a nice crunch to the overall sandwich.

Six ingredients: ciabatta roll, 1 slice proscuitto, few slices of your favorite cheese*, lettuce, mayo and dijon mustard

*I used a few slices of horseradish cheddar one day and then shifted to thinly sliced parmesan…both were very tasty.

Toast bread, mix mayo/mustard in equal portions, spread on bread, assemble sandwich. Serve with sliced tomatoes sprinkled with kosher salt, chips, fruit or by itself. You won’t be sorry.
