olive feta flatbread

This was one of those dishes that is simple to make, but ends up tasting so amazing you wonder why you never thought of it before! It is a great appetizer, side dish or even a light lunch or dinner.  We will be serving this at our next dinner party for sure.

Crumble some fresh feta cheese into fairly small pieces and spread over a pita.  Then top that with an olive tapenade and either grill or bake the pitas at 375 degrees until they are hot in the middle and the cheese on top is toasty.  To finish, squeeze a fresh lemon over the top and sprinkle with a small amount of fresh parsley.

You could also mix up the olives and feta cheese together before topping the pitas. We found that this method is better for getting an even amount of olive and cheese in every bite, but isn’t as pretty so take your pick!

We used a pre-made olive tapenade for this recipe, but I’m going to do a homemade one pretty soon so I’ll post that recipe here if it turns out well.

We ate this as a side dish to a meal of grilled fish and grilled squash.
