The Redneck Challenge
Last night Laura was out on the town celebrating some friends’ birthdays and I was left at home to fend for myself. Normally when I’m forced to find my own dinner I take the easy way out and hit up a local restaurant for take out. But last night I decided to do something different. I decided to have opposite “FTLOG” night. I reached deep back into my rich Texas heritage and thought of the most redneck thing I could possibly make for dinner.
I don’t have pictures of my redneck feast because I couldn’t find Laura’s camera (I don’t have my own) and the beer appetizer sapped my will to continue looking for it. However, I will post the menu and ask each of you, in the comment section, to disclose your ideal redneck feast. Person with the best menu gets a suitcase of Miller High Life (or cash value).
MENU:
Appetizer – beer
Main course – Cheapest steak I could find at Safeway smothered in A-1 sauce, a side of chicken rice-a-roni, and a salad smothered in cheese and ranch dressing (I just couldn’t bring myself to use Bacos).
Dessert – Store brand ice cream sandwich

Appetizer – fried pork skins & ice cold Bud Light
Main course – drunken chicken on the grill, corn on the cob, and bagged salad with ranch
Dessert – peach cobbler with blue bell vanilla ice cream

Now, I could have been funny and made some reference to road kill…but in all honesty, I now have a craving for pork skins and blue bell ice cream! Damn

Appetizer – Store brand cola with Jack Daniels knock off whisky, boones farm over ice for the ladies. Crackers with your choice of cheese in a can or sliced velveeta.
Main Course – Salisbury Steak (google the recipe, you won’t be disappointed) smothered in gravy from a powdered mix, side of mini corn dogs with ketchup and green bean casserole.
Dessert – Deep fried twinkies and hostess cupcakes with cool whip on top.

Appetizer – Ruffles chips with a brick of cream cheese smothered in Pace picante chased with re-iced beer left over from the last fishing trip
Main course – Grilled cheese bacon cheese burger and chili cheese fries
Dessert – Thelma’s Truckstop coconut cream pie

I heard about this throw down while I was up at the lease being a real live redneck, unlike you posers, so I had time to come up with my menu. And then I come home and find out that Freakin’ Erin stole 2 out of 3 of my selections! IzzzOK though cuz I reached way down deep into my inner redneck and came up with better stuff anyway.

Classic Red Neck Meal
Appetizer-Fritos and Bean Dip with Pabst Blue Ribbon beer, or PBR, preferably while riding around in your Ford pickup.
Entree-Chicken Fried Steak in tons of gravy, mashed taters with gravy, fried okra, iceburg lettuce with ranch dressing, and biscuits with more gravy.
Dessert-Bucee’s ‘Beaver nuggets’ by the bag full, again while riding around in your pickup, or a Dairy Queen Heath Bar Blizzard.
Oh and you might make sure you take your Lipitor afterwards!

I must add here that all red neck humor aside, the culinary world has benefited from those who will eat anything…how else did we get raw oysters, foie gras, and rocky mountain oysters.
