Strawberry pastry/cannoli/burrito thing
John in Houston
What’s in a name anyway? We didn’t struggle nearly as much eating this as we did in failing to come up with a definitive name that’s for sure. It all started when we became victims, truthfully when I became a victim, at the Cooper Farms roadside stand yet again. This time it was the strawberries that took advantage of me. We came home with a quart of dead ripe berries when I know full well that we barely get through a pint before they grow that gray strawberry fuzz. What to do? After some brainstorming we decided to trying rolling a mixture of seasoned strawberries and cream cheese in some refrigerator pizza dough and see what happened. If there are degrees of OMG this is very close to the top! Definitely a do again.
1 cup trimmed and halved strawberries plus a couple more pretty ones for garnishing
1/4 cup cream cheese in 1/4 inch or so dice
I roll of refrigerator pizza dough (We used Pillsbury)
1/2 tsp ground cinnamon
1 Tbs granulated sugar
Chocolate syrup
Confectioners sugar
Mix the berries, cream cheese, sugar and cinnamon reserving a couple berries for the garnish
Lay out the dough on a lightly greased non stick baking sheet and cut to desired length
Roll up and seal all ends of the strawberry thing
Bake according to dough package instructions
Remove from oven and plate, drizzling chocolate syrup and dashing with confectioner’s sugar as desired.
Garnish with the reserved berries
Shamelessly pig out!

Yum. You know I’d be in on that being a sweets lover. Looks delicious!

Now that is a recipe Emeril would have been proud of…lack of pig fat notwithstanding. Sounds completely over the top but I’m sure it was delicious.

Sweet, easy, and delicious. How can you not try this!! That picture alone should have you salivating!! For the non sweet eaters, this is a good dessert because the dough and strawberries are not sweet and you can control the topping. It could even be a breakfast pastry for ‘on the go’ mornings or brunch weekend menus!!
