The Humble Tomato Sandwich

Ok, so I was holding it up to catch the light, I promise. No, we weren’t worshiping a tomato sandwich but if there was a sandwich that deserved holy status, it would be this one. Soft, slightly sweet bread (made fresh by the Pennsylvania Dutch…no Wonder bread for us!), thin layer of mayo, sprinkle of kosher salt, and then tart, juicy, melt in your mouth tomatoes, sliced thick with a crisp topper of fresh lettuce. No, we didn’t forget the bacon, we just didn’t invite it to the party. When the tomatoes are this good, they’re all you need.
So get theeself to the nearest farmers market and pick up some fresh tomatoes…they should be heavy in the hand, firm to the touch and a deep red. And get ready to hold up your sandwich in awe! (for you protein lovers, toss some crisp bacon on there and even a few slices of avocado, if you must)

That looks mouth wateringly delicious! Fresh garden tomatoes can be so amazing it’s a crime that the store bought ones are like cardboard! And while they are abundant, buy as many as you can and can the ones that can’t be eaten fresh! Who needs bacon!!

It’s all over for us for the year, but we had a good one. I guess I’ll just have to live vicariously through you Northerners until next May.
