I adapted your recipe with the addition of leftover rotisserie chicken and some cotija cheese.  Then crumbled some pecorino romano on top and let it bake into brown crunchy bits.  The chicken justified it being an entree and Sarah loved it (it also made good leftover velcro).  Thanks for the idea.</description>

Perfect with a salad and glass of wine, I&#039;d guess...even if it&#039;s another month or two before we see snow!</description>
