Guest post: Cayenne Snickerdoodles

The other day I was intrigued when Emeril Lagasse prepared snickerdoodles with cayenne pepper on Good Morning America, so I made a batch today. The recipe can be found on the GMA website: http://abcnews.go.com/GMA/recipe?id=9242172
I was afraid that the cookies would not have enough bite, so made two batches of the sugar mixtures to roll the cookies in—one as described in the recipe and one with light brown sugar and double the cayenne. In the picture, the two cookies at the top and right have the extra cayenne.
The Verdict: The mixture with less cayenne was milder and subtler and Jana’s favorite. I liked the version with light brown sugar and more cayenne; however, the extra cayenne seemed to mask the flavor of the cinnamon.
As a side note, using the left-over sugar mixture to sweeten a cup of English breakfast tea made for an interesting beverage.

Interesting! I haven’t made much use of the spicy/sweet flavor combos but from the popularity of Mexican hot chocolate and chai tea, it’s obvious people like the tingle with the sweet. Those would make for a fun addition to a holiday gift basket.

Got to taste these when we were visiting Dad and Mom…I liked the spicy ones but think it would be best with 1 1/2 the amount of cayenne.

Those look delicious! Welcome to FTLOG and great contribution!! Now I’m thinking of trying cayenne in chocolate chip, oatmeal raisen, pecan sandies,….it could be the ingredient noone can figure out that makes your cookies extra special!!
